Midnight Service Window

A late-night menu experiment built around smoke, citrus, and heat.

Some menus are planned weeks ahead. Others happen because somebody says, “What if we put charred orange on that?” at 11:47 PM.

Midnight Service Window started exactly like that.

We were parked after a long event with half a prep table still covered in ingredients. Roasted peppers. Citrus. Smoked onions. Fresh herbs we definitely bought too much of. Instead of packing everything away, we started testing combinations directly on the flat top while music played through a tiny speaker taped inside the truck.

The result became one of our favorite rotating specials yet.

The dish centered around grilled chicken layered with black garlic aioli, charred orange glaze, crispy potatoes, and a pepper relish that somehow tasted both smoky and bright at the same time. It felt messy in the best possible way — sharp flavors, heat, texture, and a little unpredictability.

That’s usually when we know something belongs on the menu.

Arreu has never been about staying still. The best dishes tend to come from experimentation, quick pivots, and moments where the kitchen feels more like a studio than a system. Sometimes ideas work immediately. Sometimes they absolutely do not. Both are part of the process.

This one stayed.

For three nights only, Midnight Service Window sold out before closing. People kept asking if it would become permanent. Maybe it will. Maybe it won’t. That’s part of the fun.

Tomorrow’s menu could look completely different.
