The Burn Test
Inside the process of creating Arreu’s spiciest rotating dish yet.
There’s a point during recipe testing where somebody says, “Okay, this might be too much.”
That’s usually when we keep going.
The Burn Test started with a simple goal: create a dish built entirely around layered heat instead of just raw spice. We wanted something smoky, bright, sweet, and uncomfortable in a fun way.
The first versions failed immediately.
Too bitter. Too salty. Too aggressive. One batch cleared the entire truck because the chili oil smoke was genuinely impossible to breathe around. Another somehow tasted like burnt grapefruit.
Progress.
Eventually we found balance through contrast. Honey cut through the heat. Lime sharpened everything. Crispy onions added texture while cooling ingredients stopped the spice from becoming overwhelming.
The final dish ended up hotter than anything we’d served before, but still balanced enough that people kept going back for another bite.
That’s the difference between intensity and chaos.
Anyone can make something painfully spicy. Building flavor around that heat is the difficult part.
The Burn Test lasted only six days on the menu, but people still ask about it months later. Which probably means we should bring it back eventually.
Maybe even hotter.
